Today is Thursday and in the spirit of throwback i remembered this gorgeous cookie cake that i made for my sister and her husbands wedding anniversary back in August. Butterscotch Soft Cookie Cake a.k.a “Gone in 60 seconds”. It was that good, everyone loved it and i think you should try it 🙂


Butterscotch Soft Cookie Cake
Makes one 8 inch round cookie

Key Players
Flour – 2 Cups
Butter; melted – ½ Cup
Cream Cheese; room temperature – ¼ Cup
Brown Sugar – ½ Cup
Egg – 2
Baking Soda – 1 teaspoon
Cornstarch – 1 tablespoon
Salt – ¼ teaspoon
Butterscotch chips – ½ Cup

Let’s Bake!

  • Preheat oven to 350°F/180°C/Gas Mark 4
  • Mix the dry ingredients in a bowl
  • In a separate bowl, mix the cream cheese, melted butter and eggs
  • Pour the butter mixture into the dry mixture and mix until fully incorporated. Batter will be thick
  • Fold in the chips
  • Turn the cookie batter into greased pan, press down and smooth the top
  • Bake for about 20 – 25 mins


  • Let cool
  • Indulge
